Easy Stuffed French Toast Sticks Recipe (2024)

Hi ya’ll. Can you tell I’m getting excited for this Christmas breakfast stuff? I don’t know if I ever mentioned it, but I married the best pancake maker in the world. No seriously, Ben is fabulous at making pancakes. They are the lightest and fluffiest clouds of goodness that you will ever partake. The only problem is that he never measures. He doesn’t need to. He just knows how to make them basically with his eyes closed. I’m getting better though! One day I will have a whole list of pancake recipes to share with you once I get the measuring down, from cornmeal, to oats, to whole wheat, to almond flour. Yeah, now we’re talking.

Anywho, I love breakfast any time of the day. I literally almost started a blog once called I LOVE BREAKFAST, but then I realized I do also love other food too so it might be a little overly niche for me….. (I just happen to REALLY LOVE breakfast.)

My kids love Ben’s pancakes. They are also real big fans of french toast. It can get a little messy though. So,one of my sisters-in-laws threw out this genius little idea of ditching the silverware and instead cutting the french toast in strips to serve like sticks. Then she gave her kids a small container of syrup for dipping. I thought, hey let’s just dip these babies in a little cinnamon sugarinstead of syrup to help with that dilemma because, well, syrup still causes some horrible disasters around here with my little ones.Mission accomplished. Kids now have finger food, happy, seems to be less mess….. (add the syrup, and a whole different story will emerge no matter what shape those Frenchies are in). I still prefer the syrup for me, of course!

Enter STUFFED French Toast STICKS. Now I’ve had stuffed french toast before where basically it was a delicious sandwich of french toasty goodness. Tasty, but once again, a little messy for the ninos. So, when I saw a clever little youtube video a couple months ago for Stuffed French Toast Sticks, I knew a winning combination had occurred!

Now, I don’t usually promote shall I say “cheaper” store bought bread, but the best variety for these bad boys is good ole’ fashioned Texas Toast. You want a bread that’s not going to fall apart when you roll it because you are literally going to flatten it out like a sheet.

Then it’s super easy.

  1. Cut off crusts of bread, if desired. Rollout each piece of bread with a rolling pin (this is oddly therapeutic to me).
  2. Put in filling.
  3. Roll and secure with toothpicks.
  4. Dip into egg mixture.
  5. Place in preheated skillet with about 1/4 to 1/2 inch canola oil in bottom.
  6. Fry the first side (seam side down).
  7. Pull the toothpicks out and flip over.
  8. Finish cooking.
  9. Roll in cinnamon sugar mixture…… and
  10. Eat!

My kids ate these right up! And it was fun because we could do a variety of fillings quickly with what I had on hand and the kids could even choose their own combos. We didpeaches and cream cheese, raspberryjam and cream cheese, and chocolate banana. I’m thinking of about a million other combos you could do that would be equally delicious (think any berry with or sans cream cheese, Nutella, peanut butter…….the list goes on!)

Ingredients

For the French Toast:

  • 4pieceslarge eggsI usually plan 1 egg per 2 of bread, beaten
  • 2tablespoonsmilk
  • 1teaspoonvanilla
  • 8piecesof Texas Toast bread

For the Filling (use whatever you'd like - here are a few ideas):

  • Cream Cheesecut into strips
  • Fresh or canned fruitpeaches, strawberries, raspberries, bananas, etc., sliced
  • Jam
  • Nutella spread
  • Chocolate chips
  • Peanut butter

For the Cinnamon Sugar Topping (simply mix to combine):

  • 1/2cupgranulated sugar
  • 1teaspoonground cinnamon

Other Items Needed:

  • 2inchdeep large pan for fryingmay also use deeper
  • Canola oilfor pan
  • Shallow and wide containers good for egg mixture and cinnamon sugar topping
  • Rolling Pin
  • Kitchen shearsfor optional trimming
  • Toothpicks

Instructions

  1. Preheat skillet to medium heat with 1/4 to 1/2 inch canola oil over stove top burner.

  2. Combine eggs, milk, and vanilla in a shallow dish good for dipping. Mix until well-combined and set aside.

  3. If desired, trim the edges of bread to remove the crust.

  4. Using your rolling pin, roll out each piece of bread into a very flat square.

  5. Fill each piece of bread with desired combination of fillings. Don't overfill and try avoid the edges as it may be hard to roll and close if you do! (Also, you don't really want ingredients seeping and spilling out into the oil when you go to cook them as that can result in popping oil and bigger messes.)

  6. Roll bread closed (like a burrito) and secure, seam side down with at least three toothpicks (I like to cook seam side down first so that it seals well and then you can remove the toothpicks before flipping to get a good crispy results on each side).

  7. Dip each french toast stick into mixture. To get top, ladle over with spoon or fork since toothpicks will be in the way of dipping.

  8. Place sticks into your preheated pan and cook until browned on bottom side (about 3 minutes).

  9. Carefully remove toothpicks and flip to cook second side until golden brown.

  10. Remove from oil onto plate lined with paper towels to catch excess oil.

  11. While still warm, dip sticks into the cinnamon sugar mixture to coat.

  12. Enjoy!
